White Chocolate Cheesecake
Ingredients:

Graham Cracker Crust:

1 cup crushed graham crackers
1/2 cup sugar
6 Tablespoons unsalted butter, melted

Cheesecake:

6 ounces white chocolate
4 (8 ounce) packages of cream cheese, room temperature
1/2 cup, plus 2 tablespoons sugar
4 eggs
2 egg yolks
2 tablespoons flour
1 teaspoon vanilla

Preheat oven to 350 degrees.

Combine first three ingredients and blend till mixture is moist.  Spread on the bottom of a 9" springform pan and bake for 15 minutes.  Remove from oven and cool.

Lower oven to 250 degrees.

Melt chocolate over double boiler until smooth, then take off heat and set aside.  In a large bowl, beat cream cheese until light and fluffy, add sugar, beat in whole eggs and egg yolks, one at a time, until well blended.  Beat in flour and vanilla.  Beat in melted chocolate.  Pour into springform pan and bake for 1 hour.  Turn heat up to 300 degrees and bake for another 15 minutes.  Cool in oven with door open for 1 hour.  Place on wire rack for another two hours.  Place in refrigerator over night to cool completely.
