Stuffed Mashed Potatoes
Ingredients:

5 Boiled potatoes, peeled
1 beaten egg
1/3 cup parmesan or romano cheese
2 tablespoons softened butter
1 cup chopped broccoli or spinach
1 cup cubed mozzarella (very small cubes)
1/2 cup cubed boiled ham (very small cubes)
1 teaspoon fresh basil

1/2 loaf white bread
1 beaten egg

Crumble the white bread in food processor to make bread crumbs.  Toast bread crumbs in oven over low broiler.  Be careful not to burn.  Set aside.

Mash the potatoes with ricer or pastry cutter.  Add the beaten egg and butter.  Mix well with your hands.  Add the broccoli or spinach, mozzarella, ham, and basil and mix well.  Roll into logs about 2-1/2 inches long and 1 inch thick.  Roll each log in the second beaten egg, then the bread crumbs.  Fry in a deep fryer until golden brown and drain. Serve hot.
