Red Velvet Cake
Ingredients:

2-1/2 cups self-rising flour
1 teaspoon baking soda
2 tablespoons unsweetened cocoa powder
1-1/2 cups sugar
1-1/2 cups vegetable oil
2 large eggs, lightly beaten
1 teaspoon white vinegar
1 teaspoon vanilla extract
1 cup buttermilk
2-1/2 tablespoons red food coloring

Cream Cheese Frosting

Preheat oven to 350 degrees fahrenheit.  Spray three 9-by-2-inch round cake pans with cooking spray, and line with wax paper.  Set aside.

Sift together flour, baking soda, and cocoa.  Set aside.

Combine sugar, vegetable oil, eggs, vinegar, vanilla and food coloring.  With an electric mixer, beat until light and fluffy, about 2 minutes.  Add 1/3 flour mixture and beat until mixed.  Add 1/2 buttermilk and mix.  Repeat with remaining flour mixture and buttermilk, ending with flour.

Divide evenly among pans.  Bake until a cake tester inserted into the middle comes out clean, about 30 minutes.  Cool completely.  Frost with
cream cheese frosting.
